Thanks to its well-balanced protein content and high stability, our Type “00” Rinforzata flour is ideal for recipes that require medium and long proofing times. Its workability makes it suitable for baking baguettes, using either the direct or indirect method. It is suitable for use in proofing chambers.
Mulino Padano flours’ only ingredient is soft wheat.
May contain traces of soy and mustard.
